ReFINE:
TENUTA SERRANOVA SUSUMANIELLO SALENTO

Repeat after me: Soo-soo-man-ee-ello. That's the grape, and it tastes even better than it sounds! A bit of a forgotten native Puglian variety that's been rediscovered, with many a new planting under way. This is from a rare, older block, boldly planted some 20 years ago. Almost as daft as opening a wine shop in a corner shop in a small Cheshire village, also 'planted' 20 years ago! Baked plum and cherry fruit, with a roasted spice note and a touch of toffee sweetness on the finish.

BILLAUD-SIMON LES VAILLONS CHABLIS PREMIER CRU

A cracking parcel from one of the most respected domains in Chablis, with a new wine-making team taking the wines to an even loftier level. Their 'Vaillons', from a 3ha plot of south-facing old vines, offers up striking aromas of white flowers and citrus peel, with a captivating palate that somehow combines intensity with subtlety. A classy drop to enjoy now, or put away for <5 years.

DOMAINE DE GRANDPRÉ MINOTAURE ROSÉ

This old vine Rose is another beauty hailing from Provence. A blend of Grenache, Mourvedre and Cinsault. Full of berry fruit and peach notes, this lovely long wine has enough balance and roundness in the mouth to stand alone or enjoy with food.

LE SECRET DE SAINT PIERRE ROSÉ

The bottle says “pays du Var” not “Provence” but it still comes from the same region. It still is packed with peach and strawberry fruit. It still is oh so delicately pale pink. It still is bone dry. What it isn’t is Provence-priced. Probably the best value rose in the market.

CHAPOUTIER BILA-HAUT

A soulful red from a top producer, and ridiculously good value sub £10 (Jeb Dunnuck recently awarded it 91-93 points!) A blend of hand-picked Syrah, Grenache and Carignan from the slopes of the Agly valley, in the foothills of the Pyrenees. Rich, ripe fruit provides a fleshy mid-palate, with savoury, wild herb notes and a fine structure adding real class. Fill that rack!

PODERI COLLA LANGHE RIESLING

We're in Barolo country here, with most plots reserved for its sole grape variety, Nebbiolo. The Colla family however, are partial to a drop of Riesling, and decided to give it a go, planting a block back in 1987. I love this white- it captures the racy, limey, minerality I want from a decent Riesling, but there's a mysterious backdrop that tells you you've been whisked away to Piedmont's rolling hills. Ridiculous at £14.50. Try it with a decent risotto.

PEROLLA SAN FELICE VERMENTINO

Vermentino is yet another variety touted to become 'the next Sauvignon Blanc'- a funky, frisky, variety that strips off in public. Not too dissimilar in profile either, with a grassy, grapefruity grin with a sprig of tarragon between its teeth. Go on- give it a go- we're offering this at a barmy £9.95, safe in the knowledge that once you try it, you'll be hooked and happy to pay full price for it!

SAN FELICE CHIANTI CLASSICO

Chianti Classico prices have gone a bit daft in recent years, and you can easily fork out £20 for a sour, insipid, charmless free-loader. Not at Define of course. There are still a few great value gems hidden in those glorious hills, and the team at San Felice is the primest of examples. 80% Sangiovese with a couple of locals (Colorino and Pugnitello) on backing vocals. A generous, lifted, spicy nose, with cranberry fruit characters and a hint of cedar. The palate has fresh red cherry and bramble fruit flavours and fine, polished tannins - showing depth and good integration along with ripe red fruits, vibrant acidity, and a long supple finish.

PRA OTTO SOAVE

Benchmark Soave. This is from the Classico hillside that looks down in disgust on the plains that stretch out beneath it, that gave Soave (swar-vay, just to be clear), such a bad rap for so long. This is beautifully crafted, and utterly delicious, with a mix of pear and peach with that classic almond twist on the finish. Find me a better wine on the planet at £12.50 and I'll buy the vineyard (if you can lend me some money!).

DOMAINE OTT CLOS MIREILLE ROSE

I’ve long been a fan, and was unsurprised to see the effort required to maintain their reputation at the top of the Provence rosé tree, a position held ever since Marcel Ott created the domain in 1932. Clos Mireille runs right up to a secluded stretch of beach- I must admit to having a wee against a tree, overlooking the Med a few years back! One hell of a view! They rotate blocks of vineyard, leaving them fallow for 5 years before re-planting. A huge financial and physical commitment, but key to achieving the purity of fruit in their wines. A thing of beauty, with a delicate mix of citrus and wild strawberry and a long, silky finish that will leave you speechless. Fire up the barbie, whack on the biggest prawns you can find, and smile.

VALENCISO BLANCO RIOJA

With poise, texture and sophistication this is a steadfast Define favourite. On the nose is a gentle smoke and preserved lemon, while the palate is full and intense. Nuts, stone fruits and some centring citrus acidity to finish! A big white that could hold court with the likes of a full roast or mustard mash.

PABLO Y WALTER MALBEC

OK, so the label's not everybody's glass of Malbec, but it's what's inside that matters, right? This really is a great value buy, made from a 25 year old vines in the top Agrelo zone of Mendoza. An unoaked, unadulterated homage to the juicy, crunchy wonder that is Argie Malbec, delivering a jaw-dropping, bruising uppercut of black and blue fruit (see what I did there?!).

VALENCISO RESERVA RIOJA

Most Rioja producers spread their bets by making a range of reds, buying in fruit to fulfil market demands for each of the red Rioja categories: Tinto, Crianza, Reserva, Gran Reserva, with strict rules to adhere to each category. Valenciso raise not two, but one glass to this institutionalised approach, focussing all their efforts on producing one great red each year, made entirely from fruit grown on their estate. 100% Tempranillo from Rioja Alta is treated to 17 months in the finest French (not the cheaper, more common American) oak. Thankfully all this pays off to deliver a Pamplona bull of a wine- lithe, muscular, energetic and a bit pissed off with the way of the world.

PRA SOAVE MONTE GRANDE

A little beauty. Not a big flash Koh-i-Noor of a diamond, this is a more delicate rarity, elegantly cut with artistic precision. A mesmerising mix of blossom, almond and white peach, with a tantalising finish stretched long and far by a defining mineral streak. This has won Italy’s top gong- Tre Bicchieri (3 glasses) 5 years in a row, and is one of the great white wine buys at full price. At sub-£20, it’s a total no-brainer for fans of Italian whites.
